Rita's Kitchen protein-first production book built on the Cedar Farms inventory: every meal plates 6 oz cooked protein, 4-5 oz cooked starch and 4 oz cooked vegetable. Forty-four production sheets, grouped by protein, that scale from a 50-meal church kitchen to a 1,250-meal Rita's Kitchen run.
