Partner guidelines

  • Use these pages for churches, schools, faith-based groups and community partners preparing meals for Caring for Friends.
  • Each recipe rescales to 25, 50, 100 or 200 meals using the corrected plating standard.
  • All quantities are starting production estimates. Validate actual cooked yield, tray fit, allergen labels, cooling capacity and final accepted meal counts.
  • Partners should not guess portions: use a scale, fixed scoops or portion tools, and confirm the first finished meals before production continues.

Non-negotiable

Food safety & quality

  • Cook poultry and ground poultry to 165°F internal temperature; cook ground beef to 160°F; cook fish to 145°F.
  • Cooling, freezing, refrigeration and reheating must follow the approved CFF/local food-safety plan.
  • Label each delivery with recipe name, date, storage status, allergens and partner/group name.
  • Record final accepted meal count, rework, waste and any substitutions.

Chicken

Cook all poultry to 165°F. Breaded, pulled, diced or glazed — chicken travels and reheats well.

Shared production checklist

Pack meals in approved CFF containers. Keep components neat, avoid sauce on tray rims, label clearly, and record final accepted meal count before delivery or pickup.

Before cooking

  • Confirm final recipe and meal count.
  • Confirm allergens and labels before production begins.
  • Weigh protein, starch and vegetables before cooking.
  • Set up thermometers, scale, labels and cooling/freezing space.
  • Assign one person to record yield and accepted meal count.

During cooking

  • Verify internal cook temperatures using a food thermometer.
  • Keep sauce levels controlled so trays do not leak.
  • Use consistent scoops/ladles for all meals.
  • Taste only after the batch is mixed and hot.
  • Stop production if portion weights drift or trays do not close properly.

After production

  • Cool and store according to the approved food-safety plan.
  • Label with recipe name, date, storage status, allergens and partner/group name.
  • Record final accepted meals, rework, waste and comments before the team leaves.
  • Photograph one finished meal for future training and quality reference.
